Salad with shrimps, mango and avocado

Seafood Australia is rich all year round, but the mango season falls on the local summer (European winter). And when in October the first mangoes appear on the shelves, you can treat yourself to such an original light salad. But if you do not have a fresh ripe mango, I think it can be replaced with a canned option.

- Shrimps 400g
Boil the shrimp in salted water, peel and cut. It is better to take royal prawns, but the usual ones will do.

Mango and avocado are cleaned, cut into large cubes and added to shrimp.

- Limes 2 pcs.
Now we’ll prepare the flavoring. On a small grater rub zedra half of one limes. From both limes squeeze the juice.

- Cilantro (coriander) 10 g
- Chili pepper 1 pc.

- Olive oil 17 ml
- Honey 20g
We connect grated zest, lime juice, coriander, chili, 1 tbsp. l. olive oil and 1 tbsp. l. honey. A good mix, you can salt to taste. This is a salad dressing and serving it on lettuce leaves. If there are extra limes, you can add a piece of jewelry for decoration.
