This delicious dessert, invented in Australia in honor of the ballerina Anna Pavlova in the 30s of the 20th century. At the heart of the dessert is a special kind of baked protein crunching outside and soft inside, and for filling use strawberries and kiwis or exotic fruits. In this recipe, cream-based cream and mascarpone was used instead of whipped cream, which is preserved better than just whipped cream.

You will need

Mascarpone 250g Lemon juice 5 ml
Cream 20-22% 80 ml Vanilla extract ½ tsp.

Whisk the proteins until soft peaks in a spacious container.

  • Sugar (sand) 200 g

Put sugar in and continue whisking at high speed until the sugar dissolves and the mass becomes smooth and shiny.

Corn starch 15 g Vanilla extract ½ tsp.
Lemon juice 5 ml

Add a tablespoon of starch, lemon juice and vanilla extract. Starch and lemon juice are needed to get baked, but soft meringue, which is also well cut.

  • Beat for about a minute to get a very thick and stable mixture.

On a sheet of baking paper, draw a circle with a diameter of about 22 cm (you can take a plate or lid of a suitable size), turn over the paper and lay out the whipped whites so that something like a plate with bumpers turns out.

Put in an oven, heated to 140 degrees and bake an hour. Then turn off the heat and let the meringue cool in the oven with the door ajar.

  • Mascarpone 250g

For cream, mash the mascarpone cheese with a spoon.

  • Add cream and powdered sugar, mix.
  • Be sure to whip the mixer at the lowest speed or manually.

As soon as the mixture ceases to be lumpy, stop whipping, otherwise it will break up into oil and whey. Ready cream keeps the form, but it is very gentle. Keep it in the refrigerator until use.

Completely cool the merengu, transfer to a plate and fill it with chilled cream. Sometimes a large basket is difficult to separate from paper, then you can just gently cut the paper around.

On top of the cream, put the washed, dried and chopped berries. It’s better to serve dessert at once, but it will surely survive several hours in the refrigerator.
